I am a sucker for a good smoothie. They are a great and easy place to sneak in some extra veggies into your day. Especially as a busy mom, smoothies can be such a great way to get some extra nourishment or have an easy meal. (Remember to think about smoothies as a meal!)
Smoothies can also be a lifesaver in early pregnancy. When I was in my first trimester anything green made my stomach turn. Tossing some spinach or kale into a smoothie was pretty much the ONLY way that I could stomach them.
Here’s a delicious option for a smoothie – using all the lovely peaches that are in the markets right now!
Chia Peach Green Smoothie
- handful spinach
- 1 tablespoon chia seeds
- 1 banana
- 1 chopped peach
- 1 cup unsweetened almond milk
- Add ingredients to blender in order listed (you want your greens on the bottom by the blade so they blend better and have the chia on the bottom to absorb some liquid before you blend).
- Wait a couple of minutes for the chia seeds to start soaking up the almond milk.
- Blend, Serve and Enjoy!
Tip: Smoothies are the ultimate recipe for substitutions. Try swapping different greens, fruit or seeds to match your preference.
Bonus: Chia seeds not only have fiber and essential omega-3 fatty acids but they contain all of the essential amino acids from protein.
